Components

  • 2 tablespoon coconut oil
  • 2 tablespoon dietary yeast flakes
  • 1 fennel bulb, carefully sliced
  • 1/2 cup toasted pepitas (pumpkin seeds)

  • 2 garlic cloves, chopped
  • 450g asparagus spears, woody ends trimmed, sliced diagonally into 2.5 cm lengths
  • 2 cups child English spinach leaves
  • 750mL veggie stock
  • 1 tablespoon apple-cider vinegar
  • 1 tsp lemon passion
  • 1 tablespoon lemon juice
  • 1 tsp ground cumin
  • 270mL coconut milk (optional)

Approach

  • Heat the coconut oil in a big pan over medium heat, then include the fennel, spring onions and garlic and cook for 2– 3 minutes till softened.
  • Include the asparagus, spinach, stock, vinegar, lemon enthusiasm and juice, cumin, salt and pepper. Give the boil, then lower the heat to low and simmer, covered, for 20 minutes. Permit to cool somewhat, then move to a mixer, include the coconut milk and mix up until smooth. Go back to the pan to warm through.
  • Ladle into bowls and leading with dietary yeast flakes, pepitas and fresh herbs.
